I love this breakfast! We end up making it less than we would like to because we don't always remember to leave it in the fridge overnight. But it's worth remembering because it's really delicious.
- 1 large frozen banana or 2 small ripe ones
- 50g of oatmeal
- 1 tbsp of chia seeds
- 250 ml of coconut milk
Mix half of the coconut milk with the oats and chia seeds, stir a little and leave in the fridge overnight. In the morning, put the mixture in a food processor and add the rest of the coconut milk and banana(s) until creamy.
