We love pancakes. And we love granola. Add coconut cream, skyr or Greek yogurt, some seasonal fruit (organic and in good shape) and one of our granolas and we have breakfast!
These pancakes are delicious, nutritious, 100% healthy and best of all, the kids love them.
4 ripe bananas (we like bananas from Madeira)
4 tbsp coconut oil + a little to grease the pan/hot plate
2 tbsp honey
2 well filled cups of oat flakes (making a mound)
1 tsp baking soda
1 tsp salt
1 tsp cinnamon
Put everything together in a blender until it's a thick paste. The consistency is up to you, i.e. you can have flakes more or less crushed, making the batter more uniform, or opt for an irregular texture.
Before frying the pancakes, you can add some chocolate chips to the batter.
