HOMEMADE (AND HEALTHY, OF COURSE!) KETCHUP

Those dinners that kids (and grown-ups) love, like burgers with buns, loads of sauces and fries, that make you squeamish just thinking about? We have those at home, in a healthy version. They are always lively and delicious meals.

The hamburgers can be meat or vegetable, depending on your dietary choices. We make grain burgers, or black beans and quinoa - favourites at home.

For the bread, we opt for wholemeal flour, ideally gluten-free.

Lettuce, tomato, onion confit and rocket are essential.

We make our fries extra thin, in the oven, with a little olive oil, fleur de sel and fresh herbs - whatever you have: coriander, basil, oregano... Some days we use sweet potatoes, some days the other kind.

We make the sauces at home, of course. Mayonnaise and ketchup, both delicious and healthy.

HOMEMADE KETCHUP RECIPE

In a frying pan, sauté chopped onion and garlic in olive oil. When they're brown, add chopped tomatoes and let them cook in low heat without covering the pan. The logic of cooking in a frying pan and not putting a lid on it is to make the sauce thicker, without using water.

Stir from time to time.

It takes a while and should be well done.

The next step is to season with salt, pepper and/or whatever you like, some basil leaves and mash together.

The acidity of the sauce will depend on the tomatoes. We usually make it just like this, but there are 2 ways to make the ketchup sweeter:

- add grated carrot to the stew - it tastes great!

- add a sweetener of your liking at the end - stevia, for example.
