Granola, banana and chocolate cake

Snacks, snacks and more snacks. No matter how much imagination and dedication we have, it's not always easy to keep innovating, even more so sticking to the 3 musts: healthy, tasty and thirst-quenching.

Lately we have been making several granola cakes. The kids love them and so do we. They are very easy to make, have all the ‘musts’ in them and are so good for the soul!

1 cup oat flour (or freshly ground oats)

1 cup spelt flour or other (almond is very good)

1 cup dairy-free milk of your choice (I used coconut)

4 very ripe bananas

1 tablespoon coconut oil

3 eggs

1/2 cup coconut sugar

2 teaspoons baking powder or baking soda

100g dark chocolate

1 cup Original granola or Reguila

Separate the yolks from the whites.

If you have a good food processor you can blend all the ingredients except the egg whites and granola. The idea is that the chocolate be grinded, but not powdery, because the cake is great with a few bits of melted chocolate here and there. Beat well to obtain a thick and smooth cream.

If you don't have a processor, you can grate the chocolate, add the ingredients except the egg whites and the granola and beat well until you get a thick and smooth cream.

Add the granola to the mixture, without crushing it.

Beat the egg whites until stiff and blend in well.

Bake in a greased baking pan with coconut oil (if the pan requires it) at 180 degrees for approximately 20 to 25 minutes.

The cake should be moist and fluffy.

Eat the cake still warm with your favourite yogurt: Greek, coconut, soy… Sprinkle with cinnamon and a little imagination.
